• Raw animal meat and fresh seafood naturally contain beta-glucuronidase, so testing for E. coli with a fluorescent enzyme substrate (MUG) can produce a false-positive result when irradiated with ultraviolet light, even in the absence of E. coli. The beta-glucuronidase test is a supplemental test to confirm this false positive.
